Ingredients:

For the pastry:

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 stick salted butter (cold and cut into small cubes)
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp lemon zest

For the custard filling:

  • 1 cup whole milk
  • 3 TBSP sugar
  • 1 lemon, grated zest
  • 2 TBSP cornstarch
  • 2 large egg yolks (save the egg whites for a later step)

Instructions:

    • Gradually whisk the warm milk into the egg mixture until smooth.

    • Roll out the chilled pastry dough on a lightly floured surface to about 1/8-inch (3mm) thickness.
    • Cut out dough using your pasticcioto pans (cut around the pan about 3/4 inch wider at every point of the pan and line greased pans (I use Baker’s Joy) with dough. I use bakers joy to grease my pans.
    • Fill each pastry case with a generous spoonful of cooled custard.
    • Cut out additional pan shapes from the remaining dough and place them on top of the custard. Press the edges to seal.
    • Brush the top with egg whites.Bake in the preheated oven for about 20-25 minutes, or until the pastry is golden and the custard is set. Allow to cool for a few minutes in the tin, then transfer to a wire rack to cool completely.
  4. Serve and Savor:
    • Serve your homemade Pasticciotto at room temperature or slightly warmed, dusted with a light sprinkle of powdered sugar.
